A simple pumpkin cake makes the house smell like fall and travels well to gatherings, school events or a neighborhood potluck.

Ingredients and directions
- Ingredients: 1 cup plain pumpkin puree, 2 eggs, 1/2 cup neutral oil, 3/4 cup brown sugar, 1/4 cup milk, 1 1/2 cups all-purpose flour, 1 teaspoon baking powder, 1/2 teaspoon baking soda, 1 1/2 teaspoons cinnamon, 1/4 teaspoon ginger, 1/4 teaspoon nutmeg and 1/2 teaspoon salt.
- Heat oven to 350 F. Grease an 8-inch square pan.
- Whisk pumpkin, eggs, oil, sugar and milk; add dry ingredients and stir just until combined.
- Pour into the prepared pan and bake about 30-38 minutes, checking with a toothpick near the center.
- Cool completely; dust with powdered sugar or top with a simple powdered-sugar-and-milk glaze.
Serving and storage tips
Cut into nine to twelve squares. If you add a cream-cheese frosting, refrigerate the cake. Plain pumpkin puree works best, not pumpkin pie filling.
